Honey Ice Cream
100 ml milk,
200 ml honey,
6 egg yolks,
50 g lemon juice,
to taste 600 ml cream
Method: Place the milk and honey in a saucepan and bring slowly to the boil, stirring constantly.
Whisk the egg yolks in a bowl until thick and light.
Pour the hot milk and honey into the bowl with the egg yolks and whisk to mix well.
Return the mix to a rinsed pan over a low heat, whisking until thickened. Remove and chill.
Add lemon juice and cream, and mix well.
Place the mixture in your ice cream maker and freeze, following the manufacturer's instructions. If you do not have an ice cream maker, place the mix in a suitable shallow container and allow to partly freeze. Remove from the freezer, place in a bowl and beat well with a spoon or electric beater. Return to the freezer and allow to freeze.
This recipe makes one litre of ice cream.
Honey Chilly Jam
1.5 medium red chillies - deseeded and roughly chopped,
1 lb (450g) VERY ripe tomatoes,
2 cloves of garlic - roughly chopped,
1 inch (2.5 cm) root ginger - peeled and roughly chopped,
1 tbs. fish sauce (omit for vegetarians),
8 oz (225g) honey (originally this was demerara sugar),
2 fl, oz. (55 ml) red wine vinegar,
1 tbs. balsamic vinegar
Method: Roughly chop the tomatoes (you can leave the skins on). Put half in the blender with chillies, garlic, ginger and fish sauce (if using).
Whiz until pureed then put in a pan. Pulse the rest of the tomatoes (or chop a bit finer) and add them to the pan. Add all of the other ingredients and bring to the boil slowly stirring all the time. When it reaches the boil, skim off any scum and continue to cook, uncovered for about 30-40 minutes. Make sure you stir every 5 minutes or so to stop sticking. You also need to scrape the sides of the pan every so often to make sure everything gets properly cooked. It will reduce by about half and look shiny and like a runny jam. It won't do the set test like fruit jams so don't bother. Pour into hot sterilized jars and
Honey Mint Lip Balm
This simple lip balm keeps your lips soft and smooth even in harsh weather, and it is easy to make at home.
2 tsp sweet almond oil
1/2 tsp grated beeswax
1/2 tsp cocoa,
shea, or mango butter
1/2 tsp honey peppermint oil to preference (a few drops)
Procedure:
Melt all ingredients except the honey and peppermint oil in a double boiler until melted together. Remove from heat and allow the mixture to cool slightly. Stir in the honey and peppermint oil. Pour into a small, wide-mouthed jar and let cool.
